Last week, Katherine asked if I’d ever heard of Pineapple Casserole. I hadn’t, so she sent me the link, told me she’d made it, and it was a HIT. It certainly sounded interesting, so I printed out the recipe and decided to give it a try soon. Last night, we had pork chops, Pineapple Casserole, and green beans.
Pineapple Casserole? REALLY FREAKIN’ GOOD. I certainly would never have thought of putting pineapple and sharp cheddar in the same dish, but somehow it works out. Well, of course it works out – it’s a Paula Deen recipe! I have only ever made one Paula Deen recipe that I didn’t really care for (the Crunchy Butter Cake, I think it was? Something like that.).
I made some modifications to it (halved the recipe, since it’s just the two of us, for one), and the recipe is here.
What new recipe have you tried that you weren’t sure about, and which became an instant favorite? You know I’m always on the lookout for new recipes!

I bought this cat basket a few years ago in Gatlinburg. I don’t think I’ve ever seen a cat using it the way it’s meant to be used. They all prefer to turn it upside down and then smush the top down and sleep on it that way. (That’s Jake in the picture.)

Ooh — we tried Sweet Potato Crunch for Thanksgiving for the first time. It was almost like a dessert all by itself.
Sir Flooof-A-Lot looks very smug in that last pic. He conned Mike into floofing his ear fluff.
He’s no dummy! Can you imagine what the floof would be like if I put mousse in it?
I make something called pineapple fluff or pineapple stuffing for all of the holidays. The family loves it! So, here’s the recipe – I triple it.
1 large can crushed pineapple
3 eggs beaten
1/2 cup sugar
2 tbs. flour
1/4 lb butter
4 slices of bread, broken up
Beat eggs, flour and sugar together, then add the pineapple (with juice).Set aside.
Melt the butter and then add that to the bread. Slosh that around and then fold it into the pineapple mixture. Pour into a greased dish – when I triple the recipe, I use a 13 X 9. Bake at 350 degrees for 45 minutes. Serve warm.

I tried this recipe when my oven was broken figuring the kids would hate it but it was a HUGE hit. All three of the picky eaters ask for it.
Not only does it look tasty, it looks easy. That’s a killer combination!

We made a new appetizer for our holiday parties this year – ham and pineapple pot pies. You make them with pillsbury pie crust in mini muffin pans (3 inch cirlces for bottom, 2 inch for the top). You mix 1/2 cup crushed pineapple, 1/2 cup of tiny cubes of ham, 1/2 cup swiss cheese, 1 tbs green onion, and 1/2 tsp mustard powder for the filling. paste the top on with beaten egg and add sesame seeds to the top. They are adorable and tasty!
I rarely like ham (which is funny, considering all the pork we have – but none of it is cured!), but when paired with pineapple, it’s a killer combination. Adding this to my list!
This is our favorite Holiday Breakfast:
Easy French Toast
1 cup Borden Canned Egg Nog
(recipie came from the can-ANY Eggnog works)
1/2 teaspoon salt
8 slices Frenchbread, sliced diagonally
In medium bowl combine eggnog and salt. Dip bread into eggnog, cook in hot greased skillet or griddle until until golden on both sides. Serve hot with syrup, honey, jelly or confectioner’s sugar. Refrigerate leftovers.
Easy, sweet and savory. I don’t add sugar to it-don’t think it needs it. We like breakfast sausage I get in a small Polish butcher shop in my old neighborhood in NE Philly or extra thick bacon with it.
Oooh, I haven’t had any egg nog this year. No WONDER I haven’t been in the holiday spirit!
I tried Chicken Makhani (Indian Butter Chicken) in the crockpot, and I thought I had died and gone to heaven. My whole family loves it – we make it every time we’re craving Indian food.

That recipe is a fave in our house, and REALLY easy b/c it is crock pot! My crock pot tends to cook faster than any recipe states, so I usually put the roast in frozen. Also I do this recipe with either pork roast or turkey-breast roast.

What IS it with the cats and the smooshing down of things?? I bought a dome-y cat bed thing with a dangle-y thing inside it, thinking a cat might like to hide in there and bat the ball… but no. Frankie likes to smoosh the dome down and sleep on top. I used to re-floof it up every morning, but I finally just gave in. Heheh.
Good question – I bought a Pet Sport pop-up cat carrier, and they spend all their time jumping on top of it to smoosh it down. But then it pops back up as soon as they’re off it, so they jump back on it! Repeat one thousand times before they get tired of it. 🙂

Oh, indeed I did – that stuff is so awesome that we’re making a batch of it to take to Fred’s Dad’s house on Christmas eve!

I went off sugar and flour before Easter and I rarely have cravings…unless I’m reading your blog! If I ever decide to plunge back into the white stuff, I’ll wish dearly for a ticket to Crooked Acres to sample your delicious experiments!
